Ethiopian Misir Wat with Farro and Gomen

Ingredients
- 0.75 cup red lentils, dried, rinsed
- 0.5 cup farro, uncooked
- 2 cups collard greens, chopped, stems removed
- 0.5 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 tsp berbere spice blend
- 1 tsp paprika, ground
- 0.5 tsp ground cumin
- 0.25 tsp turmeric
- 2 tbsp coconut oil, divided
- 2 cups vegetable broth, low-sodium
- 2.5 cups water, for farro
- 0.5 tsp sea salt, plus more to taste
- 0.25 tsp black pepper
- 2 tbsp pumpkin seeds, for garnish
Instructions

Bring 2.5 cups water to boil in small pot. Add farro, reduce heat to medium-low, cover and simmer 35-40 minutes until tender. Drain excess water and set aside.

In a separate large pot, heat 1 tbsp coconut oil over medium heat. Add diced onion and sauté 5-6 minutes until softened and lightly golden.
