Japanese-Style Fluffy Pancakes with Miso Butter & Crispy Bacon

Inspired by Japanese tamagoyaki (sweet rolled eggs), these impossibly fluffy pancakes are infused with dashi broth and topped with umami-rich miso butter. Served alongside crispy bacon and fresh fruit, it's a sweet-savory breakfast adventure the whole family will love!
Ingredients
- 6 whole large eggs, separated into yolks and whites
- 1.5 cups all-purpose flour
- 3 tbsp granulated sugar
- 2 tsp baking powder
- 0.25 tsp salt
- 0.75 cup whole milk, room temperature
- 2 tbsp white miso paste
- 4 tbsp unsalted butter, divided: 2 for batter, 2 for miso butter
- 8 whole bacon strips
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 2 tbsp maple syrup, for serving

Cook bacon in a large skillet over medium heat until crispy (8-10 minutes). Transfer to paper towels and set aside.
