Moroccan-Spiced Chickpea & Bulgur Stuffed Acorn Squash with Pomegranate Glaze

Roasted acorn squash halves filled with a fragrant Moroccan-spiced chickpea and bulgur mixture, topped with a tangy pomegranate-date glaze and toasted almonds. A stunning, warming dinner with North African flavors.
Ingredients
- 1 whole acorn squash, halved and seeds removed
- 0.75 cup cooked chickpeas, canned or cooked
- 0.5 cup bulgur wheat, uncooked
- 0.75 cup vegetable broth, for bulgur
- 0.33 cup pomegranate juice, unsweetened
- 3 whole pitted dates, chopped
- 0.5 tsp ground cumin
- 0.25 tsp ground cinnamon
- 0.25 tsp ground ginger
- 0.25 tsp turmeric
- 1 whole garlic clove, minced
- 0.5 whole shallot, minced
- 1 tbsp olive oil, divided
- 0.25 cup sliced almonds, toasted

Preheat oven to 400°F. Brush acorn squash halves with 0.5 tbsp olive oil, sprinkle with salt and pepper. Place cut-side down on baking sheet and roast for 25 minutes.

While squash roasts, heat 0.5 tbsp olive oil in a pan. Sauté minced shallot and garlic for 2 minutes until fragrant.
