Moroccan-Spiced Seitan & Chickpea Tagine with Herbed Couscous

A fragrant North African-inspired stew featuring tender seitan and chickpeas simmered with warming spices, dried apricots, and almonds, served over fluffy herbed couscous for a satisfying vegan dinner.
Ingredients
- 150 g seitan, cubed, store-bought or homemade
- 0.75 cup canned chickpeas, drained, about 180g
- 0.5 medium onion, diced
- 2 cloves garlic cloves, minced
- 1 tsp ginger, grated, fresh
- 1 tsp ground cumin
- 0.5 tsp ground cinnamon
- 0.5 tsp smoked paprika
- 0.25 tsp turmeric
- 30 g dried apricots, halved, about 6-7 pieces
- 25 g sliced almonds, toasted preferred
- 1 cup vegetable broth, low-sodium
- 0.5 cup diced tomato (fresh or canned)
- 0.5 cup couscous, whole wheat, uncooked
- 0.75 cup vegetable broth (for couscous)

Heat olive oil in a large saucepan over medium heat. Sauté diced onion for 3-4 minutes until softened.
