Peruvian Black Bean & Quinoa Ceviche-Inspired Salad with Crispy Tofu Croutons

A vibrant, fresh Peruvian-inspired salad combining marinated black beans and quinoa in a zesty lime-cilantro dressing, topped with pan-fried crispy tofu cubes and finished with avocado, red onion, and fresh herbs. Light, protein-packed, and bursting with bold flavors.
Ingredients
- 150 g extra-firm tofu, pressed and cubed
- 0.75 cup cooked black beans, canned or cooked
- 0.5 cup cooked quinoa, cooled
- 3 tbsp lime juice, fresh
- 2 tbsp extra virgin olive oil, divided
- 0.25 cup fresh cilantro, chopped
- 0.25 medium red onion, thinly sliced
- 0.5 whole avocado, cubed
- 0.5 cup cherry tomatoes, halved
- 1 clove garlic, minced
- 0.25 tsp cumin, ground
- 0.25 tsp sea salt, to taste
- 0.125 tsp black pepper, to taste

Press tofu between paper towels for 5 minutes to remove excess moisture. Cut into 0.5-inch cubes.

Heat 1 tbsp olive oil in a skillet over medium-high heat. Add tofu cubes and cook 8-10 minutes, stirring occasionally, until golden and crispy on all sides. Season with salt and pepper. Set aside.
