Spanish Tomato & Chorizo-Spiced Chickpea Shakshuka with Crusty Bread

A vibrant North African-Spanish fusion dinner where eggs poach in a silky, spiced tomato sauce enriched with crispy pan-fried chickpeas, roasted red peppers, and smoked paprika. Served with charred sourdough for dunking into the golden yolks.
Ingredients
- 4 tbsp extra virgin olive oil, divided for cooking
- 1 large yellow onion, diced
- 4 cloves garlic cloves, minced
- 1.5 tsp smoked paprika, Spanish variety
- 1 tsp cumin, ground
- 0.5 tsp crushed red pepper flakes, adjust to taste
- 28 oz canned crushed tomatoes, 1 can
- 0.5 cup vegetable broth, low-sodium
- 1 cup roasted red peppers, jarred or fresh, sliced
- 15 oz canned chickpeas, 1 can, drained and patted dry
- 0.75 tsp sea salt, to taste
- 0.5 tsp black pepper, freshly ground
- 8 whole large eggs, room temperature

Heat 2 tbsp olive oil in a large 12-inch skillet over medium heat. Add diced onion and sauté 4-5 minutes until softened and golden.
