- 2 tbsp coconut oil, for pan-frying
- 2 tbsp soy sauce, low-sodium
- 1 tbsp lime juice, fresh squeezed

- 1 whole garlic clove, minced
- 0.5 tsp ginger, freshly grated
- 0.5 tsp red curry powder, mild heat
- 2 pieces vegan flatbread, or plant-based tortillas
- 0.75 cup fresh mango, diced
- 0.25 cup fresh cilantro, loosely packed
- 3 tbsp unsweetened coconut milk, full-fat
- 0.5 cup couscous, uncooked
- 0.75 cup vegetable broth
