Thai Red Curry Chicken Skewers with Coconut Lime Cauliflower Rice

A delightful Thai-inspired dinner that's easy to prep and full of flavor! Tender chicken skewers in a sweet and spicy red curry marinade, served with a zesty coconut lime cauliflower rice.
Ingredients
- 1.5 lbs chicken thighs, boneless, skinless, cubed
- 2 tbsp red curry paste
- 1 cup coconut milk
- 2 tbsp lime juice, plus zest of 1 lime
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 4 cups cauliflower florets
- 1/2 cup coconut milk
- 1 tbsp lime juice
- 1/4 cup cilantro, chopped
- 1/2 tsp salt
- 1/4 tsp pepper

In a large bowl, combine the chicken, red curry paste, coconut milk, lime juice and zest, fish sauce, brown sugar, garlic, and ginger. Toss to coat the chicken. Cover and marinate for at least 30 minutes (or up to 24 hours).

Thread the marinated chicken onto skewers. Grill or broil the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through.
