Traditional Turkish Menemen with Herb Flatbread

Ingredients
- 1 large yellow onion, diced
- 3 large Roma tomatoes, diced, seeds removed
- 6 large eggs, beaten
- 2 tablespoons fresh parsley, finely chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil, divided
- 4 pieces Turkish pide or pita bread
- 1 tablespoon butter, for bread
- 1 teaspoon sea salt, to taste
- 0.5 teaspoon black pepper, to taste
- 0.5 cup feta cheese, crumbled, optional
- 1 medium cucumber, sliced, optional

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add diced onions and cook for 4-5 minutes until softened.
