Turkish Chicken Pide with Herbed Yogurt Sauce

Succulent grilled chicken breast marinated in Turkish spices, served alongside a crispy-bottomed pide flatbread topped with caramelized onions and fresh herbs, with a vibrant side of roasted Mediterranean vegetables and cooling herbed yogurt drizzle.
Ingredients
- 2 pieces chicken breast, 6 oz each, diced
- 3 tbsp extra virgin olive oil, divided
- 2 tbsp lemon juice, fresh
- 3 cloves garlic, minced
- 1 tsp sumac
- 1 tsp paprika
- 1 tsp dried oregano
- 0.75 tsp sea salt, divided
- 0.25 tsp black pepper
- 8 oz pide dough, store-bought or homemade
- 0.5 medium red onion, thinly sliced
- 0.5 medium zucchini, diced
- 0.5 medium bell pepper, diced
- 0.5 cup Greek yogurt, plain, 2% fat
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped

Preheat oven to 450°F. In a bowl, whisk together 2 tbsp olive oil, lemon juice, minced garlic, sumac, paprika, oregano, 0.5 tsp salt, and pepper.

Dice chicken breasts and marinate in half the mixture for 20 minutes. Reserve remaining marinade.
