Turkish Lamb Köfte with Roasted Eggplant & Bulgur Pilaf

Ingredients
- 10 oz ground lamb, lean ground lamb
- 3 tbsp fresh mint, finely chopped
- 3 tbsp fresh parsley, finely chopped
- 0.25 medium onion, minced
- 2 tbsp pine nuts, toasted
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 0.25 tsp sumac, optional but recommended
- 0.25 tsp sea salt
- 0.125 tsp black pepper
- 1 whole egg, beaten
- 0.75 cup bulgur wheat, uncooked
- 1.5 cups vegetable broth, low-sodium
- 1 medium eggplant, cut into 1-inch cubes
- 3 tbsp extra virgin olive oil

Preheat oven to 425°F. Toss eggplant cubes with 1.5 tbsp olive oil, salt, and pepper. Spread on baking sheet and roast for 20-22 minutes until golden and tender.

In a medium pot, heat 1 tbsp olive oil over medium heat. Add minced onion and cook 2 minutes until softened. Add bulgur and toast for 2 minutes, stirring frequently.
