Braised Lamb Köfte with Charred Eggplant & Herbed Bulgur Pilaf

Turkish-inspired spiced lamb meatballs braised in a vibrant tomato-pepper sauce, served alongside roasted eggplant and aromatic bulgur pilaf with fresh mint and parsley. Rich, warming, and deeply Mediterranean.
Ingredients
- 10 oz ground lamb, lean
- 0.75 cup whole grain bulgur, uncooked
- 1 medium eggplant, cut into 1-inch cubes
- 1 large red bell pepper, diced
- 14 oz crushed tomatoes, canned, no sugar added
- 0.5 medium red onion, finely minced
- 3 cloves garlic, minced
- 4 tbsp extra virgin olive oil, divided
- 1 tsp cumin
- 0.75 tsp paprika
- 0.25 tsp cinnamon, ground
- 3 tbsp fresh mint, chopped
- 3 tbsp fresh parsley, chopped
- 1.5 cup vegetable broth, low-sodium

Preheat oven to 425°F. In a bowl, combine ground lamb, half the minced red onion, 1 minced garlic clove, cumin, paprika, cinnamon, salt, and pepper. Form into 8-10 meatballs.

Heat 1.5 tbsp olive oil in a large braising pan over medium-high heat. Brown meatballs on all sides (4-5 minutes), then transfer to a plate.
