Crispy Chickpea & Mujadara Spiced Rice with Charred Zucchini

A Middle Eastern-inspired dinner featuring roasted chickpeas with warm spices, layered over nutty lentil-bulgur mujadara, topped with caramelized onions and served alongside charred zucchini ribbons. Crunchy, aromatic, and deeply satisfying.
Ingredients
- 0.75 cup canned chickpeas, drained and patted dry, about 150g
- 0.33 cup bulgur wheat, uncooked
- 0.25 cup red lentils, uncooked
- 1.25 cup vegetable broth, for mujadara
- 0.5 medium yellow onion, thinly sliced
- 1 medium zucchini, sliced into ribbons
- 4 tablespoon olive oil, divided
- 0.5 teaspoon cumin seeds
- 0.25 teaspoon coriander powder
- 0.25 teaspoon smoked paprika
- 0.25 teaspoon sumac, optional
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 0.5 teaspoon sea salt, divided

In a small pot, bring vegetable broth to a boil. Add red lentils, reduce heat to low, and simmer for 10 minutes.

Add bulgur to the lentils, stir, cover, and continue cooking for 15 minutes until both are tender. Drain excess liquid if needed. Set mujadara aside.
