- 5 oz tempeh, cut into 1/2-inch thick slices
- 0.75 cup white beans, canned, drained and rinsed
- 2.5 cups vegetable broth, divided
- 0.33 cup polenta, cornmeal, dry
- 0.5 cup carrots, diced
- 0.5 cup zucchini, diced
- 2 cloves garlic, minced
- 2 tablespoons sun-dried tomatoes, chopped
- 1 teaspoon fresh thyme, or 0.5 tsp dried
- 0.5 teaspoon fresh rosemary, finely chopped
- 0.5 teaspoon smoked paprika
- 2.5 tablespoons olive oil, divided
- 1 tablespoon nutritional yeast
- 0.5 teaspoon sea salt, divided
- 0.125 teaspoon black pepper
- 0.5 tablespoon lemon juice
