Crispy Tofu & Shiitake Stir-Fry with Ginger-Soy Glaze

Ingredients
- 1.5 lbs extra-firm tofu, pressed and cubed
- 8 oz shiitake mushrooms, halved
- 3 tbsp soy sauce, low-sodium
- 2 tbsp honey
- 1.5 tbsp fresh ginger, minced
- 4 cloves garlic cloves, minced
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 3 tbsp vegetable oil, for cooking
- 1 tsp cornstarch
- 2 tbsp water
- 1 lb bok choy, halved lengthwise
- 2 cups jasmine rice, cooked
- 1 tbsp sesame seeds, for garnish
- 2 stalks green onions, sliced for garnish

Press tofu between paper towels for 15 minutes to remove excess moisture. Cut into 1-inch cubes.
