Ethiopian Misir Wat with Farro & Gomen

Aromatic red lentil stew spiced with ginger, garlic, and berbere, served over nutty farro grain with sautéed collard greens. A warming, protein-rich dinner celebrating Ethiopian flavors.
Ingredients
- 0.5 cup red lentils, dried, rinsed
- 0.5 cup farro, uncooked
- 2 cups collard greens, chopped
- 0.5 medium onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 cups vegetable broth, unsalted
- 1 tbsp tomato paste
- 2 tsp berbere spice blend
- 1 tbsp coconut oil, divided
- 2 cups water, for farro
- 0.25 tsp sea salt, to taste
- 0.125 tsp black pepper, to taste
- 0.5 tbsp lime juice, fresh
Instructions

Bring 2 cups salted water to boil. Add farro, reduce heat to low, cover and simmer 25 minutes until tender. Drain if needed.

After farro has cooked for 5 minutes, heat 0.5 tbsp coconut oil in a medium pot over medium heat. Sauté diced onion for 3 minutes until softened.
