- 2 cups lacinato kale, chopped, stems removed
- 0.75 cup diced tomatoes, canned or fresh
- 1.5 cups vegetable broth, low-sodium
- 0.75 cup zucchini, diced
- 0.5 cup carrots, diced
- 0.25 cup celery, diced
- 3 cloves garlic, minced, divided (2 for soup, 1 for croutons)
- 1.5 ounces crusty bread, cut into 0.5-inch cubes for croutons
- 2.5 tablespoons extra virgin olive oil, divided
- 0.5 teaspoon dried oregano
- 0.25 teaspoon dried thyme
- 1 teaspoon balsamic vinegar
