Korean Beef Bulgogi Bowls with Ginger-Scallion Fried Rice

Tender beef bulgogi in a sweet and savory marinade, served over fragrant ginger-scallion fried rice for a family-friendly Korean-inspired dinner.
Ingredients
- 1.5 lbs flank steak, thinly sliced against the grain
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp sesame oil
- 4 cloves garlic, minced
- 2 tbsp ginger, grated
- 2 cups jasmine rice, cooked
- 6 scallions, thinly sliced
- 1 cup frozen peas
- 2 tbsp vegetable oil
- 2 eggs, scrambled

In a large bowl, combine the sliced flank steak, soy sauce, brown sugar, sesame oil, garlic, and ginger. Cover and marinate for 30 minutes to 1 hour.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the marinated beef and cook for 3-5 minutes, stirring occasionally, until cooked through. Remove beef from skillet and set aside.
