Lebanese Mujadara with Crispy Seitan & Caramelized Onion Garnish

A Middle Eastern celebration of lentils and bulgur wheat layered with savory crispy seitan strips and topped with luxuriously caramelized onions. Served with a bright tahini-lemon drizzle and fresh herbs for an elegant, protein-rich dinner.
Ingredients
- 0.5 cup brown lentils, rinsed
- 0.25 cup bulgur wheat, medium grain
- 2 cups vegetable broth, low sodium
- 100 grams seitan strips, store-bought or homemade
- 1 medium onion, thinly sliced
- 2 tbsp olive oil, divided
- 2 cloves garlic, minced
- 0.75 tsp ground cumin
- 2 tbsp tahini, raw
- 1.5 tbsp lemon juice, fresh
- 3 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 0.5 tsp sea salt
- 0.25 tsp black pepper

Heat 1 tbsp olive oil in a large skillet over medium heat. Add sliced onion and cook for 12-15 minutes, stirring occasionally, until deep golden brown and caramelized. Season with salt and pepper. Transfer to a plate.

In the same skillet, add remaining 1 tbsp oil and sear seitan strips over medium-high heat for 4-5 minutes per side until crispy and golden. Set aside.
