Moroccan Spiced Beef & Chickpea Tagine

A fragrant, family-friendly Moroccan tagine with tender beef, chickpeas, and warm spices. Served over fluffy couscous for a wholesome, globally-inspired dinner.
Ingredients
- 1.5 lbs beef stew meat, cut into 1-inch cubes
- 1 15oz can chickpeas, drained and rinsed
- 1 15oz can diced tomatoes, with juices
- 1 cup beef broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper, or to taste
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous

In a large pot or Dutch oven, brown the beef cubes over medium-high heat until no longer pink, 3-4 minutes. Transfer to a plate.

Reduce heat to medium, add the onion and cook for 5 minutes until softened. Add the garlic, ginger, cumin, coriander, paprika, cinnamon, and cayenne. Cook for 1 minute until fragrant.
