Moroccan-Spiced Chickpea & Quinoa Breakfast Porridge with Roasted Root Vegetables

A warming, aromatic breakfast porridge inspired by North African flavors, combining fluffy quinoa with creamy chickpeas, warming spices (cinnamon, cumin, turmeric), and topped with crispy roasted carrots and parsnips. Sweet, savory, and protein-packed!
Ingredients
- 0.5 cup quinoa, uncooked
- 0.75 cup canned chickpeas, drained and rinsed
- 1.25 cups unsweetened almond milk
- 0.5 cup vegetable broth
- 0.5 tsp ground cumin
- 0.25 tsp ground cinnamon
- 0.25 tsp turmeric powder
- 0.25 tsp ginger powder
- 1 medium carrot, cut into 0.5-inch batons
- 1 small parsnip, cut into 0.5-inch batons
- 1 tbsp coconut oil, divided: 0.5 for roasting, 0.5 for porridge
- 0.25 tsp sea salt
- 0.125 tsp black pepper
- 2 tbsp pumpkin seeds, for topping
- 3 whole dried apricots, chopped, optional sweetness
