Moroccan-Spiced Chickpea & Seitan Tagine with Herbed Couscous

A warming North African stew featuring tender seitan and chickpeas braised in aromatic spices, dried apricots, and tomato broth, served over fluffy herbed couscous with toasted almonds and fresh cilantro
Ingredients
- 150 g seitan, cubed, or store-bought strips
- 0.75 cup chickpeas, canned and drained, about 180g
- 0.5 cup diced tomatoes, canned
- 0.75 cup vegetable broth
- 3 tbsp dried apricots, chopped
- 0.25 large onion, diced
- 2 cloves garlic cloves, minced
- 0.5 tsp ginger, grated, fresh
- 0.5 tsp ground cumin
- 0.25 tsp ground cinnamon
- 0.25 tsp paprika
- 0.25 tsp turmeric
- 0.5 cup couscous, dry
- 0.75 cup vegetable broth for couscous
- 2 tbsp fresh cilantro, chopped
- 1 tbsp fresh mint, chopped
- 2 tbsp sliced almonds, toasted

- to taste pinch sea salt

Heat olive oil in a medium pot over medium heat. Sauté diced onion for 3 minutes until softened.
