Moroccan Spiced Pork Tagine

A family-friendly Moroccan-inspired pork stew with warm spices, tender vegetables, and a touch of sweetness. Serve over couscous for a complete, globally-inspired dinner.
Ingredients
- 1.5 lbs boneless pork shoulder, cubed
- 1 yellow onion, diced
- 3 carrots, peeled and sliced
- 1 15oz can garbanzo beans, drained and rinsed
- 1 14.5oz can diced tomatoes, with juices
- 2 cups chicken broth
- 2 tbsp honey
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous, cooked according to package

In a large pot or Dutch oven, brown the pork cubes over medium-high heat until golden on all sides, about 5 minutes. Remove pork and set aside.

Reduce heat to medium, add the onion and sauté for 3-4 minutes until translucent. Add the carrots and sauté for 2 more minutes.
