- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 cup couscous
- 1 cup diced red bell pepper
- 1 cup diced zucchini
- 1/4 cup chopped fresh parsley
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper

In a large bowl, combine the cubed pork tenderloin, cumin, coriander, paprika, garlic powder, 2 tbsp olive oil, and 2 tbsp lemon juice. Toss to coat the pork evenly. Cover and marinate in the refrigerator for at least 30 minutes, up to 24 hours.
