Portuguese Garlic & White Wine Cod with Creamy Potato Purée

Ingredients
- 1.5 lbs cod fillets, skin-on or skinless, 4 fillets about 6 oz each
- 1.5 lbs Yukon Gold potatoes, peeled and cubed
- 1 lb fresh green beans, trimmed
- 6 cloves garlic, minced
- 0.75 cup dry white wine, or low-sodium vegetable broth
- 0.5 cup low-sodium fish or vegetable broth
- 3 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 0.25 cup fresh parsley, chopped, for garnish
- 0.5 tsp sea salt
- 0.25 tsp black pepper
- 0.5 cup whole milk or heavy cream, for potato purée

Preheat oven to 400°F. Bring a large pot of salted water to boil.
