Golden pan-fried tofu cubes nestled in a savory white bean and tomato broth infused with garlic, smoked paprika, and bay leaves, served alongside caramelized roasted turnips and garlicky sautéed kale for a hearty, deeply satisfying vegan dinner.
Ingredients
- 200 g extra-firm tofu, pressed and cubed
- 0.75 cup canned white beans, drained and rinsed
- 0.5 cup crushed tomatoes, canned
- 0.75 cup vegetable broth, low-sodium
- 150 g turnips, cubed
- 2 cups fresh kale, chopped, stems removed
- 4 cloves garlic, minced
- 0.75 tsp smoked paprika
- 1 whole bay leaf
- 2 tbsp olive oil, divided
- 0.25 tsp sea salt
- 0.125 tsp black pepper
- 1 tsp red wine vinegar
