Roasted Winter Vegetable Salad with Grilled Chicken

A delicious and nutrient-dense paleo lunch featuring roasted seasonal vegetables, grilled chicken, and a zesty vinaigrette.
Ingredients
- 2 cups butternut squash, peeled and cubed
- 1.5 cups Brussels sprouts, halved
- 1 medium red onion, sliced
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 pounds boneless, skinless chicken breasts
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 4 cups baby spinach
- 0.5 cup pecans, chopped

Preheat oven to 400°F. Toss the butternut squash, Brussels sprouts, and red onion with 1 tablespoon of olive oil, salt, and pepper. Spread the vegetables on a baking sheet and roast for 25-30 minutes, stirring halfway, until tender and lightly browned.

Meanwhile, season the chicken breasts with salt and pepper. Grill or bake the chicken until cooked through, about 15-20 minutes. Let the chicken rest for 5 minutes, then slice or shred it.
