Saffron-Kissed Chickpea Mujadara with Crispy Tahini Onions

Ingredients
- 0.5 cup brown lentils, rinsed
- 0.33 cup bulgur wheat, medium grain
- 0.5 cup chickpeas, canned, drained and rinsed
- 2 cups vegetable broth, low-sodium
- 0.125 teaspoon saffron threads, soaked in 2 tbsp warm water
- 1 medium yellow onion, thinly sliced
- 3 tablespoons olive oil, divided
- 2 tablespoons tahini, well-stirred
- 1.5 tablespoons lemon juice, fresh
- 2 cloves garlic, minced
- 0.5 teaspoon ground cumin
- 0.25 teaspoon ground coriander
- 0.5 teaspoon sea salt, adjust to taste
- 0.25 teaspoon black pepper, freshly ground
- 3 tablespoons water, for tahini sauce
- 1 tablespoon fresh mint, chopped, for garnish
- 0.5 teaspoon pomegranate molasses, optional drizzle
