Ingredients
- 4 salmon fillets
- 8 cups mixed greens
- 2 cups roasted sweet potato cubes
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup raw pumpkin seeds
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- salt and pepper, to taste

Preheat oven to 400°F. Toss the sweet potato cubes with 1 tbsp olive oil and season with salt and pepper. Roast for 15-20 minutes until tender.
