- 4 salmon fillets
- 2 medium sweet potatoes, cubed
- 2 cups brussels sprouts, halved
- 2 tbsp olive oil
- 6 cups mixed greens
- 1 avocado, diced
- 2 tbsp lemon juice

Preheat oven to 400°F. Toss the cubed sweet potatoes and brussels sprouts with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender.

Season the salmon fillets with salt and pepper. Heat the remaining 1 tbsp olive oil in a skillet over medium heat. Cook the salmon for 4-5 minutes per side, until flaky.
