- 1 lb green beans, trimmed
- 4 eggs, hard-boiled
- 8 cups mixed greens, baby spinach, arugula, romaine
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved
- 1 lemon, juiced
- 2 tbsp olive oil, plus 1 tbsp for roasting
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
