Seared Tuna Poke Bowl with Edamame and Quinoa

A refreshing and protein-packed GLP-1 friendly poke bowl featuring seared tuna, edamame, quinoa, and a light ginger-sesame dressing.
Ingredients
- 1 lb ahi tuna steaks, sushi-grade
- 2 cups quinoa, cooked
- 1 cup edamame, shelled, cooked
- 1 medium cucumber, diced
- 2 medium carrots, julienned
- 4 whole green onions, sliced
- 2 tbsp sesame seeds
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp fresh ginger, grated
- 1 tbsp lime juice

Season the tuna steaks with salt and pepper.

Heat a skillet over high heat. Sear the tuna for 2-3 minutes per side, until lightly charred on the outside but still pink in the center. Allow to cool, then dice into 1-inch cubes.
