Ingredients
- 12 oz large shrimp, peeled and deveined
- 1 cup whole grain orzo pasta, uncooked
- 1.5 cups cherry tomatoes, halved
- 5 tbsp extra virgin olive oil, divided
- 8 cloves garlic, minced, divided
- 1 tsp smoked paprika
- 2 tsp fresh thyme, chopped
- 0.25 cup whole grain breadcrumbs, panko or homemade
- 3 tbsp fresh parsley, chopped
- 1 whole lemon, zest and juice
- 1 cup vegetable broth, low-sodium
- 0.25 cup dry white wine
- 0.5 tsp sea salt
- 0.25 tsp black pepper

Cook orzo according to package directions in salted boiling water. Drain, reserving 0.5 cup pasta water.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Toast breadcrumbs with 2 minced garlic cloves and 1 tbsp parsley until golden, 2-3 minutes. Transfer to a bowl and set aside.
