Spicy Moroccan Lamb Tagine with Herbed Couscous

A fragrant and flavorful Moroccan-inspired tagine made with tender lamb, warm spices, and vibrant veggies. Served over a bed of fresh herbed couscous for a truly global family dinner.
Ingredients
- 2 lbs lamb shoulder, cubed
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/4 tsp cayenne pepper, adjust to taste
- 2 cups chicken broth
- 1 15oz can diced tomatoes
- 3 medium carrots, peeled and diced
- 1 1/2 cups couscous
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 4 lemon wedges, for serving

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.

Add the lamb and brown on all sides, about 5-7 minutes. Remove lamb from pot and set aside.
