Teriyaki Glazed Chicken Skewers with Pineapple Fried Rice

Juicy chicken skewers glazed in a sweet and savory teriyaki sauce, served over a fresh pineapple fried rice. A fun Japanese-inspired family meal that's easy to customize!
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 cup pineapple, diced
- 2 cups brown rice, cooked
- 1/4 cup soy sauce
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 green onions, sliced
- 2 tbsp sesame seeds
- 4 lime wedges

In a medium bowl, combine the cubed chicken, 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tbsp rice vinegar, 1 clove minced garlic, and 1 tsp grated ginger. Toss to coat, then thread onto skewers.

In a large skillet or wok, heat 1 tbsp oil over medium-high heat. Add the remaining garlic, ginger, pineapple, and cooked rice. Stir-fry for 3-4 minutes until heated through.
