Ingredients
- 150 g seitan, cubed
- 0.75 cup coconut milk, full-fat, divided
- 2 tbsp Thai green curry paste, vegan
- 0.5 cup jasmine rice, uncooked
- 1 cup vegetable broth, low-sodium
- 200 g bok choy, whole heads
- 1 whole lime, juiced
- 3 cloves garlic, minced
- 1 tbsp ginger, minced fresh
- 0.25 cup Thai basil, fresh leaves
- 1 tbsp coconut oil, for cooking
- 1 tsp tamari, gluten-free soy sauce
- 0.5 tsp fish-free sauce alternative, optional depth

Start rice: Combine jasmine rice with 1 cup vegetable broth and 0.25 cup coconut milk in a small pot. Bring to boil, then reduce to low heat, cover, and simmer for 18 minutes.
