Turkish Grilled Lamb Köfte with Charred Eggplant & Herbed Couscous Pilaf

Succulent ground lamb meatballs infused with warm spices and fresh herbs, grilled until caramelized, served alongside smoky roasted eggplant and fluffy whole wheat couscous pilaf with toasted pine nuts and fresh mint.
Ingredients
- 1.25 lbs ground lamb, 85/15 lean
- 0.25 cup fresh mint, finely chopped
- 0.25 cup fresh parsley, finely chopped
- 0.5 medium red onion, minced
- 3 cloves garlic cloves, minced
- 1.5 tsp ground cumin
- 1 tsp ground coriander
- 0.5 tsp sumac, optional but recommended
- 0.75 tsp sea salt
- 0.25 tsp black pepper
- 1 whole large eggplant, cut into 0.5-inch rounds
- 4 tbsp extra virgin olive oil, divided
- 1.5 cups whole wheat couscous, dry
- 2.25 cups vegetable broth, low-sodium

Preheat grill to medium-high heat (400°F). If using oven, preheat to 425°F.

In a large bowl, combine ground lamb, mint, parsley, red onion, garlic, cumin, coriander, sumac, salt, and pepper. Mix gently with hands until just combined—do not overwork.
