Ingredients
- 4 whole large eggs, room temperature
- 100 grams smoked salmon, high-quality, thinly sliced
- 1 medium red bell pepper, diced
- 0.5 medium yellow onion, finely diced
- 2 medium heirloom tomatoes, roughly chopped
- 1 cup fresh spinach, loosely packed
- 3 tablespoons extra virgin olive oil, divided
- 2 whole garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 0.5 teaspoon sea salt, to taste
- 0.25 teaspoon black pepper, freshly ground
- 0.25 teaspoon Aleppo pepper, optional, for depth
