Turkish Menemen-Style Shakshuka with Smoked Salmon, Chickpeas & Herb Oil

A vibrant Turkish-inspired breakfast featuring poached eggs nestled in a fragrant tomato-pepper sauce with crispy smoked salmon, roasted chickpeas, and finishing with herb-infused olive oil. Served alongside toasted whole grain bread.
Ingredients
- 6 tbsp extra virgin olive oil, divided
- 1 medium red onion, thinly sliced
- 1 large red bell pepper, diced
- 3 medium fresh tomatoes, diced or canned crushed tomatoes, 14 oz
- 3 cloves garlic cloves, minced
- 1 cup canned chickpeas, drained and patted dry
- 8 oz smoked salmon, flaked into bite-sized pieces
- 8 eggs large eggs, room temperature
- 4 slices whole grain bread, thick-cut sourdough or spelt
- 3 tbsp fresh parsley, finely chopped
- 2 tbsp fresh dill, finely chopped
- 1/2 tsp red pepper flakes, or to taste
- 1 tsp sea salt

Heat 3 tbsp olive oil in a large skillet over medium heat. Add sliced red onion and diced red bell pepper, sauté for 5-7 minutes until softened and slightly caramelized.

Add minced garlic and cook for 1 minute until fragrant. Stir in diced tomatoes, red pepper flakes, salt, and black pepper. Simmer for 5-7 minutes until sauce thickens slightly.
