Turkish Spiced Lamb Köfte with Charred Eggplant & Bulgur Pilaf

Fragrant ground lamb meatballs infused with warm spices, pomegranate molasses, and fresh herbs, served alongside smoky roasted eggplant and nutty bulgur pilaf with toasted pine nuts. A Turkish-inspired dinner with bold Mediterranean flavors.
Ingredients
- 10 oz ground lamb, lean
- 0.75 cup bulgur wheat, dry
- 1.5 cups vegetable broth, low-sodium
- 1 medium eggplant, cut into 1-inch cubes
- 3 tbsp extra virgin olive oil, divided
- 1.5 tbsp pomegranate molasses
- 0.25 cup onion, minced
- 2 cloves garlic, minced
- 0.5 tsp cumin, ground
- 0.25 tsp cinnamon, ground
- 0.5 tsp paprika, smoked
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
- 3 tbsp pine nuts, toasted

Toast pine nuts in a dry skillet over medium heat for 3 minutes until fragrant; set aside.

In a large bowl, combine ground lamb, minced onion, garlic, cumin, cinnamon, paprika, 1 tbsp parsley, 1 tbsp mint, egg, breadcrumbs, salt, and pepper. Mix well and form into 8 oval-shaped köfte patties.
