Turkish-Spiced Lentil & Walnut Stuffed Acorn Squash with Pomegranate Glaze

Roasted acorn squash halves filled with a warm, aromatic mixture of red lentils, toasted walnuts, and Turkish spices, finished with a tart pomegranate reduction and fresh herbs. A show-stopping dinner that's both comforting and globally inspired.
Ingredients
- 1 medium (about 1.5 lbs) acorn squash, halved lengthwise, seeds scooped
- 0.5 cup red lentils, dried
- 0.25 cup walnuts, roughly chopped
- 1 cup vegetable broth, unsalted
- 0.25 cup pomegranate juice, no added sugar
- 1 tbsp maple syrup, optional, for glaze
- 0.25 medium onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp olive oil, divided
- 0.75 tsp cumin, ground
- 0.25 tsp cinnamon, ground
- 0.5 tsp coriander, ground
- 0.25 tsp sumac, optional but recommended

Preheat oven to 400°F. Brush acorn squash halves with 1 tbsp olive oil, season with salt and pepper. Place cut-side down on a baking sheet and roast for 20 minutes.

While squash roasts, heat remaining 1 tbsp olive oil in a saucepan over medium heat. Sauté diced onion for 3 minutes until translucent.
