Vibrant Moroccan Chicken Tagine with Couscous Salad

Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 medium onion, diced
- 3 cloves garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp paprika
- 0.5 tsp cinnamon
- 1 14oz can crushed tomatoes
- 0.5 cup low-sodium chicken broth
- 1 cup couscous
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 0.5 cup feta cheese, crumbled
- 0.25 cup parsley, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- to taste salt and pepper

In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the chicken thighs and brown on both sides, about 3-4 minutes per side. Remove chicken and set aside.

In the same skillet, add the remaining 1 tbsp olive oil and the diced onion. Sauté for 3-4 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant.
