Zesty Cuban Mojo Pork Bowls

Vibrant, family-friendly Cuban-inspired pork bowls with citrusy mojo sauce, rice, and roasted plantains.
Ingredients
- 2 lbs boneless pork shoulder, cubed into 1-inch pieces
- 1/2 cup orange juice
- 1/4 cup lime juice
- 5 cloves garlic, minced
- 2 tsp oregano
- 1 tsp cumin
- 1 tsp salt
- 1/4 tsp black pepper
- 3 medium plantains, peeled and sliced 1/2-inch thick
- 2 tbsp olive oil
- 2 cups cooked brown rice
- 1 diced avocado
- 1/4 cup fresh cilantro, chopped

In a large bowl, combine the pork, orange juice, lime juice, garlic, oregano, cumin, salt, and pepper. Toss to coat the pork. Cover and marinate in the refrigerator for at least 30 minutes, up to 24 hours.

Preheat oven to 400°F. Spread the plantain slices on a baking sheet and toss with 1 tbsp of the olive oil. Roast for 20-25 minutes, flipping halfway, until golden brown and tender.
