Zesty Thai-Inspired Chicken Satay Bowls

Vibrant, family-friendly Thai chicken satay with creamy peanut sauce, served over a bed of coconut lime rice and crunchy veggies.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 13.5 oz can coconut milk
- 1 cup long grain white rice
- 2 tbsp fresh lime juice
- 1/4 cup creamy peanut butter
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 cucumber, diced
- 2 carrots, julienned
- 4 green onions, sliced
- 1/4 cup cilantro, chopped

In a medium saucepan, combine the coconut milk, rice, lime juice and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15-20 minutes until rice is tender.

In a medium bowl, whisk together the peanut butter, soy sauce, honey, garlic and ginger. Add the chicken and toss to coat. Thread the chicken onto wooden or metal skewers.
