Ingredients
- 2 medium sweet potato, cubed
- 2 cups brussels sprouts, trimmed and halved
- 1 can chickpeas, drained and rinsed
- 1 cup quinoa, cooked
- 1 lb chicken breast, grilled or baked, cubed
- 1 medium avocado, diced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Toss the sweet potato cubes and brussels sprouts with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
