Baja Fish Tacos with Mango Salsa

Ingredients
- 1.5 lbs cod fillets, cut into 1-inch pieces
- 1 cup all-purpose flour
- 2 tbsp cornstarch
- 12 oz beer, lager or pale ale
- 1 tsp salt
- 2 cups vegetable oil, for frying
- 12 corn tortillas, 6-inch
- 2 mango, diced
- 1/2 red onion, diced
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 1/2 cup sour cream
- 1 tsp lime zest
- 2 cups shredded cabbage

In a large bowl, whisk together the flour, cornstarch, and salt. Gradually whisk in the beer until a smooth batter forms.

In a large pot or Dutch oven, heat the vegetable oil to 350°F. Working in batches, dip the cod pieces in the batter and carefully add them to the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Drain on a paper towel-lined plate.
