Balsamic Glazed Pork Tenderloin Skewers with Roasted Vegetable Couscous

Tender pork tenderloin marinated in a sweet balsamic glaze, skewered and grilled to perfection, served over a bed of fluffy couscous with roasted veggies for a well-balanced, globally-inspired family dinner.
Ingredients
- 1.5 lbs pork tenderloin
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 zucchini
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes
- 1 cup couscous
- 1 cup chicken broth
- 1/4 cup parsley, chopped

In a large resealable bag, combine the balsamic vinegar, honey, garlic, 1 tbsp olive oil, salt, and pepper. Add the pork tenderloin and marinate for 30 minutes to 1 hour.
