Brazilian Cheese Bread & Fried Egg Breakfast Bowl

A vibrant Brazilian-inspired breakfast combining warm, pillowy pão de queijo (cheese bread) with silky caramelized eggs, fresh lime-dressed greens, and crispy bacon. This dish brings together traditional Brazilian flavors with authentic breakfast simplicity.
Ingredients
- 1 cup Tapioca starch (polvilho doce), Key ingredient for authentic pão de queijo texture
- 0.75 cup Gruyère cheese, finely grated, Adds depth beyond standard pão de queijo
- 0.5 cup Whole milk, Warmed slightly
- 4 tbsp Extra virgin olive oil, Brazilian palm oil optional but traditional
- 6 whole Large eggs, 2 for bread dough, 4 for frying
- 4 strips Bacon strips, Breakfast bacon only
- 2 cups Fresh arugula, Peppery greens for contrast
- 1 whole Lime, For dressing
- 0.75 tsp Sea salt, Brazilian sea salt preferred
- 0.25 tsp Black pepper, Freshly ground
- 2 tbsp Scallions, sliced, Fresh garnish

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Heat milk and 2 tbsp olive oil together until steaming. Pour over tapioca starch in a bowl and stir until combined. Cool 2 minutes, then beat in 2 eggs one at a time, followed by grated Gruyère and 0.5 tsp salt until fully incorporated.
