Brazilian Grilled Picanha with Chimichurri Roasted Sweet Potatoes

Ingredients

- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp lime juice
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 4 medium sweet potatoes
- 1/2 cup parsley, finely chopped
- 1/4 cup cilantro, finely chopped
- 2 tbsp red wine vinegar
- 1/2 tsp red pepper flakes

In a shallow dish, combine the olive oil, garlic, lime juice, cumin, oregano, salt, and black pepper. Add the picanha steak and turn to coat both sides. Cover and marinate for at least 30 minutes, up to 2 hours.

Preheat grill to high heat. Grill the picanha steak for 3-4 minutes per side for medium-rare, or until it reaches your desired doneness. Transfer the steak to a cutting board and let it rest for 5 minutes before slicing against the grain.
