Brazilian Picanha Beef Skewers with Chimichurri Quinoa

Tender, juicy picanha beef skewers marinated in a zesty Brazilian-inspired marinade, served over a bed of fresh chimichurri-dressed quinoa. A global family favorite that's easy enough for weeknights!
Ingredients
- 1.5 lbs picanha beef, or top sirloin steak, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp lime juice
- 3 cloves garlic, minced
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup quinoa
- 1/2 cup parsley, chopped
- 1/2 cup cilantro, chopped
- 2 tbsp red wine vinegar
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/2 tsp salt

In a large resealable bag, combine the picanha beef, olive oil, lime juice, garlic, oregano, salt, and pepper. Marinate for at least 30 minutes, up to 24 hours.
